Sourdough Hot Cross Buns

12 Steps
1 Mix together 100 g sourdough starter , 20 g melted butter , 120 ml milk (warmed), 130 ml hot water , 1 egg , 50 g sugar , 1 tsp salt , and 500 g bread flour in a large bowl.
2 Leave for 1 hour .
3 Stretch and fold the dough, then rest. Repeat 2 more times.
4 Prove for 9 hours .
5 Shape into 12 buns and place on a baking tray.
6 Put in the fridge overnight.
7 Next morning, leave to rise until doubled in size.
8 Bake at 180°C for 30 minutes .
9 Glaze while still warm.
